Mazariner (Swedish Almond Tarts)

This is my dad's favorite tea-time treat; I always make these for him for his birthday and they always go over a charm!

Ingredients

Dough

  • 1 and 1/4 cups flour

  • 1/3 cup sugar

  • 1/2 tsp salt

  • 1 stick butter, cold, cut into pieces

  • 1 egg

  • water to bind

Filling

  • 1 cup ground almonds

  • 1/2 cup sugar

  • 1 stick butter, softened

  • 2 eggs

  • 2 tsp almond extract

  • 1 tbsp Amaretto (optional)

Icing

  • 1 cup icing sugar

  • About 2 tbsp milk


Method

1. For the dough, mix all the dry ingredients together. Crumble in the butter until the mixture resembles coarse crumbs, then add the egg, almond extract and enough water to make a soft dough. Refrigerate for 30 minutes while you make the filling.

2. For the filling, mix all the ingredients together in a bowl. Refrigerate until ready to use.

3. After 30 minutes, take the dough out of the fridge and turn it out onto a floured surface. Roll the dough out to a little thinner than 1/4 inch thick. Grease a muffin pan. Cut out circles of dough and line the muffin tin with them. Fill each tart with the almond filling, and bake in a 350 degree Fahrenheit oven for 15-20 minutes. Remove the tarts onto a metal rack and let cool completely.

4. Mix the ingredients for the icing together. Frost the tarts and let the icing harden. Enjoy with coffee, of course!
