These super-simple chocolate oat treats are perfect for a little sugar hit in the middle of the day!

Happy December everyone!


The Christmas season is the perfect time to cosy up with a nice, warm cup of peppermint tea and a little chocolate treat by the fire. These are some of the easiest treats you could possibly make - minimal effort and maximum gain! Because let me tell you, these little beauties are phe-no-me-nal. Oats, cocoa powder, and coffee combine to make these delightful little bites of winter-time joy... so they're naturally gluten-free! Oh, and if you swap the butter for a plant-based alternative, then they're both gluten-free and vegan!

So what are you waiting for? Get in the kitchen and whip up a batch of these!


P.S. Be sure to pick up the pearl sugar at your local Scandinavian store or online.


Ingredients

  • 1 stick (114g) butter

  • 1/2 cup sugar

  • 4 tbsp cocoa powder

  • 1 tsp vanilla extract

  • 1-1/2 cups quick-cooking outs

  • 4 tbsp cold, strong coffee

  • Swedish pearl sugar

Method

  1. Melt the butter in a large, microwave-safe bowl.

  2. Mix in the sugar, cocoa powder, vanilla, oats, and coffee.

  3. Stir well until completely incorporated.

  4. Cover and refrigerate for 1 hour, until set.

  5. Form gumboil-sized balls out of the mixture using a spoon and rolling with your hands. Place on a plastic-wrap-covered plate.

  6. Pour out some pearl sugar onto another plate.

  7. Roll each ball in the pearl sugar until completely coated.

  8. Serve and enjoy with a strong cup of coffee or tea!
