Swedish Toffee Cookies

These gorgeous treats are chewy, gooey, and delicious!


These are some of the simplest, easiest, and most delectable cookies you will ever have the pleasure to meet.


Let me tell you something: these cookies are the WAY to a person's heart. Whip up a batch of these for someone you want impress and sit back and watch the compliments roll on in!

These take no more than 10 minutes to make and another 7 or so to bake -- that's it! They are great for when company is over or for when you're craving a sweet treat with your nightly cup of tea after dinner. So cosy on up and get baking!


Ingredients

  • 1 stick (114g) unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1-1/2 tbsp syrup (maple, golden, or anything you have in your cabinet!)

  • 1-1/4 cups all-purpose flour

  • 1 tsp baking powder

  • 1-1/4 tsp vanilla extract

Method

  1. Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with baking/parchment paper and set aside.

  2. Put the softened butter in a large bowl and cream until loose.

  3. Add in all the other ingredients and mix until well-combined.

  4. Divide the dough into two pieces and roll each out into two logs.

  5. Place each log on the baking sheet (giving them some room to spread out) and flatten them gently with your fingers so that they look like really long, flat-ish ovals.

  6. Bake for 7-10 minutes.

  7. Remove the baking sheet from the oven and use a sharp knife to score each log diagonally into ten pieces. Let cool and finish cutting.

  8. Serve and enjoy!
